Déméter, Bordeaux: a restaurant’s photographer and community manager, monthly, since 2024

Déméter is a bistronomy table in the Saint-Pierre quarter of Bordeaux, with a short, rotating menu. This was not a shoot: I am the restaurant’s photographer and community manager, billed monthly, with a record going back to March 2024.

Context

Déméter sits at 9 rue Ausone, in the Saint-Pierre quarter of Bordeaux, in what used to be Mampuku. Forty covers and a private room, a kitchen open onto the dining room, a short menu that turns over. Gary Village runs the kitchen, with Guillaume Le Goff, Léa Lemaitre and Aurore Dourguia, and Louis Duclos on wine. The house has a Fooding listing and 12 out of 20 in the Gault&Millau. The relationship does not run on one-off commissions: it is billed monthly to the company behind the restaurant, and covers both the photography and the social channels.

Challenge

A short, rotating menu rules out building an image bank once and for all: what was photographed in January is no longer served in March. So you come back, and you come back without remaking the same frame in the same room, which seats forty and has one usable window. On top of that, the content does not serve the restaurant alone: it feeds a regular publishing rhythm, with its own constraints of pace and format.

Approach

The scout was done once and has served ever since: the window table for daylight, the curve of the counter for overheads, the pass for kitchen frames, the bar lamp for wine. Each monthly visit returns to those positions with the dishes of the moment, which yields a coherent series without a single repeated image. Plates are photographed in service, never rebuilt. The house apron, the blue glazed ware and the pale timber are enough to sign the images without adding a logo.

Deliverables

Monthly photo series, plus the running of the property’s social channels. Community management has been invoiced since the autumn of 2025, and the monthly shoots were invoiced in January, February and March 2026.

Usage rights

The images are made for the property’s communication, social channels and website included. Releases are on file for everyone appearing in frame.

Outcome

In November 2025 the whole body of content produced since the start of the collaboration was handed over to the agency in charge of the restaurant’s website, to fill it. The work continues. See also the food photography pillar.
